The Cooking Workshop with Chef Vicky Ratnani at Godrej Nature's Basket

Now, the cooking session here was of quick and easy Chicken Recipes! Since, I am a vegetarian, I did not taste the delicacies but you can have a look here and judge for yourself as to how your palate would have responded to all the three dishes prepared by Chef Vicky! He nevertheless, did suggest vegetarian substitutes for Chicken and Egg suiting each of the recipes!



INGREDIENTS:
Godrej Real Good Chicken Strips 150g
Olive Oil
Salt
Pepper
Grain mustard 1/2 tspn
Minced Garlic 1 tspn
Minced Chilli 1/2 tspn
Chopped Rosemary 1/2 tspn
Chopped Parsley 1/2 tspn
In the above, Paneer, Potatoes or Cauliflower could be used in place of the Chicken Strips!
THE VEGETABLES
Batons spring onions 1/2 cup
Blanched green beans 1/3 cup
Peeled shallots 6 to 7 small
Button mushrooms 2-3
Red bell pepper coulis 1/2 cup
THE METHOD
Marinate the chicken strips with olive oil, salt, pepper, mustard, garlic, chilli, rosemary and parsley.
In a hot pan, quickly sear the chicken strips for 2 minutes
Remove from pan and set aside.
Add a dash of olive oil and saute the vegetables, season and then return the chicken strips to the pan.
Toss well until the chicken strips are cooked, for about 3 minutes.
Serve it in a bed of red bell pepper coulis. Garnish with fresh microgreens!





INGREDIENTS
Godrej Yummies Lasooni Tikka 6 pieces
For the sauce:
Cardamom whole 2
Cloves 2
Cinnamon Stick 1
Few Fennel Seeds
Bay Leaf 1
Onions, chopped 1 tbspn
Minced garlic chilli 1 tspn
Spinach puree 1 cup
Butter 1 tspn
Cream 1/3 cup
Nutmeg grated pinch
Here paneer tikkas (pre- cooked) can be a good substitute for the Chicken tikkas!
METHOD:
Cut the tikkas into bite size portions. Heat the butter in a pan.
Add the whole spices in the Olive Oil. As they crackle, add the chopped onions, ginger garlic paste and fry well.
Add the spinach puree. Simmer for a minute.
Add cream, freshly grate the nutmeg. Finally add the chicken tikka bits.


INGREDIENTS
Beaten Eggs 6
Salt
Pepper
Olive Oil 1 tbspn
Godrej Yummiez Chicken toppings 60g
Onions, chopped 1 tbspn
Red Bell pepper, chopped 1 tbspn
Green Bell Pepper, chopped 1 tbspn
Green Olives, chopped 1 tbspn
Parsley, chopped 1 tspn
METHOD
Beat the eggs until light and fluffy.
Sweat the onions, peppers, chicken and olives in the olive oil for a minute.
Spoon this mixture into fleximoulds.
Top each of them with the egg mix.
Bake for 11 minutes in a moderate oven at 170 deg. Celsius.
There is a substitute for the egg mixture, here goes the proportions of the concoction (You can obviously avoid the chicken topping!):
1 cup maida (corn flour)
1/2 tspn baking powder
1/2 tspn baking soda
150g of tofu
1/2 tspn vinegar

What more could you ask for!
All these three delicacies best fit a brunch party menu!:D
