VEGETARIANS: Replace Chicken with Paneer and land up with a Paneer Butter Masala

Ingredients for the marination
300 gms boneless chicken
 1tbsp garlic paste
1tbsp red chilli power
Salt to taste

Ingredients for the gravy
500gms roughly cut tomatoes
100 gms roughly cut onions
1tbsp garlic paste
50 gms cashew nuts
1tsp kasuri methi
1/2 tsp garam masala
2tbsp red chilli powder
7 tbsp butter
5 tbsp fresh cream
Salt to taste

- Marinate the chicken with ginger paste,garlic paste,red chilli powder and salt to taste . Keep it aside for 15-20 minutes.
- in a non stick PAN add some oil and fry the chicken.
- remove the chicken and keep it in a bowl .
-next in the same PAN add onions,oil,butter, tomatoes ,garlic paste , garam masala powder and some chilli powder . Let it simmer for 15-20 minutes till the tomatoes become soft.
- remove the mixture in a bowl and then make it into a fine purée using a hand blender.
- Strain the same  purée back into the PAN and add some butter again some cream the chicken and simmer for 5-7 minutes
- butter chicken is ready

Serving tips - serve in a bowl and garnish with fresh coriander and cream
